Pasta for 2 people (any spaghetti pasta)
2 medium tomatoes
1 medium to large red onion thinly sliced
1 capsicum thinly sliced
7-8 button mushroom sliced
10-15 black olives cut into two
9-10 cloves of garlic roughly chopped
8 Basil leaves
6-7 Cilantro twigs (just break them into 2-3 ” pieces with hands)
3 tbsp olive oil
3 tbsp grated cheese (parmesan/Mozzarella)
1 tsp cumin
1 tsp dried chilli flakes
1tsp red pasta sauce (optional)
Salt and pepper to taste
2 + 2 cups water
Blanch tomatoes in approx 2 cups water. Blanch thoroughly till the skin comes off. The water will turn tomato-ish, we need that water later. Dispose the skin. If you want you can roughly chop the tomatoes.
In a large vessel (heavy bottomed preferably) combine everything including the tomato water but leave out the cheese. Cook with lid on medium flame. Keep stirring every 2-3 mins. Add cheese when the sauce is visibly reduced. Stir and cover. It’ll take approx. 10-15 mins for everything to cook.
