When chocolate meets cake, it’s fireworks! I just came up with this new recipe while I simultaneously made it! It came out as one of the finest cakes I’ve baked or eaten! 😀

While good things have sinful calories, and we all know how calories are dreaded more than Satan these years, plus it’s impossible to separate taste from all things that dance at the waist, I always try to cut down on gluten, grease and sugar.  My recipes are the healthier version of all things deliciously sinful. 

I’m posting the recipe for everyone to try and relish! 😀 



1 cup all purpose flour

1 cup whole wheat flour 

1/2 cup cocoa
1/2 cup drinking chocolate

4 tbsp milk powder

1 tsp chocolate essence

1 tsp vanilla essence or extract of 1 vanilla bean stick

1 & 1/2 cup bubbly water /drinking soda

1 tbsp baking powder

1 tsp baking soda

1/4 tsp salt

3 tbsp oil or 4 tbsp butter

5-6 tbsp brown sugar (depends on your preference)

10-12 crushed nuts of your choice (optional) 

Leave sugar in the oil to ease. 
If using butter, melt butter & sugar together in a microwave for 20 seconds and cool.

Preheat microwave at 200• 
Sieve all the powder ingredients together. 3 times to inculcate some air.

Make a pool in centre. Pour in oil & sugar (Or butter & sugar) mix, both essences and drinking soda. Mix immediately. It should have a very smooth (not runny) consistency.

Put in the nuts and mix again. 

Grease an 8″ baking vessel. Pour in the cake batter.

Bake for 25-28 minutes. Do a Tooth pick test when in doubt. 

The cake is ready, you will see it rises beautifully. Let it cool.

Now let’s get to the Ganache.



1/2 cup drinking chocolate

2tbsp cocoa
1 tsp hazelnut syrup

1 tsp golden syrup (preferred) or honey

1 tbsp brown sugar 

1tbsp salted butter

1/4 cup cold milk

1 tsp coffee

Melt sugar and butter on a double boiler.

Take off. Add the rest of the ingredients. And then cook on double boiler 3-5 mins. 

Remove and put into freezer for 10 mins.


Once the cake is cooled, pour the ganache with a blunt knife. Garnish with crushed nuts if you want and let it set in the refrigerator for 20 mins, at least.

All done! Bask in the glory! I enjoyed mine with a cup of coffee, in the company of my brother! 🙂
